Hello ,on a lovely autumnal day like today what better pastime than making an apple cake to celebrate the bumper harvest from the orchard. So that’s what I decided to do when I returned home  from work.

This cake is moist and spiced with nutmeg and cinnamon.  You will needP1000608

for the cake

125g vegetable oil

225g brown soft sugar

2 beaten eggs

225g plain flour

2 teaspoons baking powder

2 teaspoons grated nutmeg

1 teaspoon ground cinnamon

300g peeled, cored and chopped cooking apples

for the topping

2 tablespoons clear honey,2 tablespoons Demerara sugar

what you do

Preheat oven to gas 3/160c

Whisk the oil and eggs together

Mix the sugar, flour,baking powder, and spices together

Stir in the chopped apple

Mix in the oil and eggs

Pour into a lined Swiss roll tin or small roasting tin

Bake for approx. 1 hour  or until a skewer pushed into the centre of the cake comes out clean.

Mix the honey and sugar together and pour over the hot cake.

Serve warm with cream or ice-cream
