Sometimes you just need something sweet ,but not cake or chocolate.
At times like this I whip up a batch of homemade scones,from a recipe I developed several years ago.
My scones have Greek yogurt and vegetable oil as ingredients which is quite unusual.
This makes for a moist scone with lower saturated fat than normal .
What you need
1lb self raising flour
1 beaten egg
4 heaped tablespoons Greek yogurt
3oz vegetable oil
What you do
Preheat your oven to gas 7/220c
In a jug whisk the oil,egg and yogurt together
In a large bowl mix the flour and sugar
Stir the oil mixture into the flour with a spatula ,until it starts to form a dough.
On a floured surface knead the dough until smooth
Cut out 7 or 8 scones with a fluted cutter
Place on a baking tray lined with baking parchment
Brush the tops with a little milk
Bake until golden,risen and a skewer into the centre comes out clean(approx. 15 to 20 mins)
Remove from the oven and place the scones on a wire cooling tray,covered with a clean tea towel.
Leave to cool slightly,serve with butter and jam. Enjoy.
