As well as being a bit of nut,I also love nuts.Almonds are a particular favourite of mine,especially in sweet recipes.
This recipe makes a moist almond flavoured sponge with crunch of flaked almonds on the top.
What you need
350g self raising flour
100g ground almonds
300g Greek or plain yogurt
250ml vegetable oil
6 beaten eggs
3 teaspoons almond extract
A few flaked almonds
What you do
Preheat the oven to gas 3 /160c
Place all the ingredients apart from the flaked almonds into a large bowl
Using an electric mixer combine the ingredients to form a sooth batter.
Divide the mixture equally between 4 small lined loaf tins.
Sprinkle over a few flaked almonds
Bake for approx. 30 to 40 minutes or until a skewer inserted into the centre comes out clean.
Put your feet up enjoy with a cup of tea .
